Sweet Pongal (Sakkarai Pongal)

Sweet Pongal ( Sakkarai Pongal) is the dish associated with the harvest festivals Pongal in Tamil Nadu and Sankaranti in Andhra Pradesh. In many temples, sweet pongal is given as Prasadham. It is very easy to make and gets ready quite quickly.
Ingredients
  • Raw Rice: ½ cup
  • Moong dal: ¼ cup
  • Jaggery: 1 cup grated
  • Cashew nuts: 2 tbsp chopped
  • Raisins: 2-3 tbsp
  • Cardamom Powder: ¼ tsp
  • Ghee: 2-3 tsp
Instructions
  1. Dry roast rice and dal separately until it is hot to touch.
  2. Pressure cook rice and dal together with 2½ cups of water. Mash it well and keep it aside.
  3. Heat ¼ cup of water in a pan and add jaggery to it. When it dissolves, filter it to remove impurities.
  4. Boil jaggery water with a tsp of ghee on medium heat. Take a cup of water, add a tsp of jaggery syrup to it, if it does not dissolve, then it is the right stage to add mashed rice and dal.
  5. Add mashed rice and dal mixture to the jaggery water and cook for a few minutes until everything gets blended well . Add cardamom powder and mix well.
  6. Heat 1 tsp ghee and fry cashew nuts. Add cashew nuts to the rice dal mixture.
  7. Add 1 tsp ghee to same pan and fry raisins until they puff up. Add raisins to the rice dal mixture along with ghee.
  8. Cook for a few minutes on low heat until everything gets blended well.
