Eggless Whole Wheat Pancakes

These instant eggless whole wheat pancakes are an excellent breakfast option. Instead of eggs, this recipe uses flax seeds which makes it a great one. Flax seeds are a great source of Omega 3 fatty acids which have numerous health benefits. Makes : 4-5 pancakes
Preparation Time : 10 minutes
Cooking Time : 5 minutes

Ingredients:
Whole Wheat flour: 3/4 cup
Milk: 1/2 cup
Yoghurt: 1/4 cup
Flax seeds: 1 tbsp
Water : 2 tbsp
Baking Powder: 1 tsp
Vanilla Essence: 2-3 drops
Sugar: 2 tbsp
Salt: to taste
Oil/Butter: to make pancakes

Method Of Preparation:

  1. Ground flax seeds with water. Mix all the ingredients mentioned above except oil/butter along with ground flax seeds and whisk to form a smooth batter. If the batter is too thick, you can gradually add some water or yoghurt. Basically you need to get batter of dropping consistency.
  2. Heat a non-stick pan. Add 1/2 tsp of oil and spread around. Add 1 ladleful of pancake batter on the pan. It will spread automatically. Cook on medium flame. You will see the top side getting porous. Once the top appears slightly firm, flip the pan cake.
  3. Cook until both sides appear slight golden-brown.


Since the time I made these pancakes, I stopped getting the ready to make pancake mix from the super-markets.
