In this era of innovative fondant cakes, I still have my heart with simple cakes. Somewhere the reason may also be the sugar-heavy content of the fondants which I prefer to avoid. My love for fruits explains my bent towards fruity cakes like Strawberry Cake and the Orange Cake. This time it was some over-ripe bananas on the shelf that caught my attention. Thought of this simple cake that blends the banana and coffee flavors beautifully. This microwave cake takes just around 10 minutes. So next time you have some extra bananas, try this simple cake with ingredients which you would most likely have in your kitchen.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Ingredients:
Bananas : 2 (mashed – around 1/4 cup)
All Purpose Flour : 3/4th cup
Oil : 1/4th cup
Milk : 1/4th cup
Instant Coffee : 1 tsp
Egg : 1
Brown sugar : 1/2 cup
Baking Powder : 3/4th tsp
Baking Soda : 1/4th tsp
Salt : a pinch
Method of Preparation:
- Sift together the all purpose flour, baking powder, baking soda and salt.
- Dissolve the instant coffee in the milk and keep aside.
- In a mixing bowl, add the mashed bananas, oil, coffee of step 2, egg and sugar. Beat well, till the sugar dissolves completely.
- Add the sifted flour of step 1 and mix gently till the wet and dry ingredients are mixed.
- Transfer to a greased microwave safe dish and microwave on medium power level for 8-9 minutes. Remove from microwave and let cool for a few minutes. Transfer the cake to a clean plate. This cake can be served plain or with any frosting of your choice.
