Sabzi means vegetable/(s)in hindi. Typically any recipe of cooked vegetables is also referred as sabzi, eg Cauliflower sabzi, Potato Sabzi etc.
This cauliflower sabzi goes well with rotis(Indian bread) or as a side dish with rice and dal(gravy made with pulses). Also since this is a dry sabzi, it can be used as stuffing for rolls.

Ingredients:
Cauliflower florets : 2 cups
Onion : 2 medium (roughly chopped)
Tomato : 1 medium (roughly chopped)
Ginger Garlic Paste : 2 tsp
Cumin Seeds : 1 tsp
Kashmiri Red Chilli : 1
Chilli powder : ½ tsp
Turmeric Powder : 1 ½ tsp
Garam Masala Powder : 1 tsp
Coriander leaves : for garnishing
Oil : 3 tbsp
Salt : to taste
Method of Preparation:
- Add 2 tbsp of oil to a pan and add cauliflower florets and ½ turmeric powder. Stir gently, cover and keep for 3 min. Once the florets turn a little soft, cook uncovered for another 3 min. Keep stirring occasionally.
- Grind together onion, tomato and ginger garlic paste to get a smooth paste.
- Add 1 tbsp of oil to a fresh pan. Add Cumin Seeds and Kashmiri chilli.
- Once the cumin seeds start spluttering, add Chilli powder, Turmeric powder, Garam Masala powder and stir for 1 min.
- Add the onion-tomato-ginger-garlic mixture and salt and stir for 2 min.
- Add the florets and stir. Cook uncovered for 3 min on medium flame. Garnish with coriander and your cauliflower sabzi is ready.
