Chicken Coriander Soup is a flavorful soup with coriander adding the maximum fresh flavor.
A warm soup can do wonders on a cold rainy day. Also soups serve as a great option for introducing new tastes and flavors to my toothless toddler ? . Some more soups that I often make are Simple Carrot and Tomato Soup, Tomato Egg Drop Soup and Carrot and Coriander soup. My personal favorite is the Almond Soup ? And if I am in the mood of a non-veg soup then this chicken coriander soup tops the list.
I still remember the first time I made this chicken coriander soup. It was one of the super-rainy days in Mumbai and I had reached home around 9 pm (thanks to traffic) fully drenched. A warm chicken soup seemed liked the perfect thing that day. I just put together some of these basic ingredients which were readily available in my newly set kitchen ? The result was so great, that this chicken coriander soup has found a permanent place on my soup-list ?

Ingredients:
Chicken : ½ cup
Tomatoes : 1 large (chopped)
Coriander : ¼ cup
Pepper corns : 4
Cloves : 1-2
Cinnamon : ½ inch
Water : 1 cup
Pepper : as per taste
Salt : as per taste
Method of Preparation:
- Pressure cook the chicken, tomatoes, pepper corns, cloves, cinnamon and salt.
- Once pressure cooker is cooled, open the lid and slowly remove the chicken pieces and the whole spices out.
- Cut the chicken pieces into cubes or shred them into smaller pieces discarding the bones.
- Grind the tomato pieces from the pressure cooker with coriander till you have a fine paste.
- Take a saucepan, add the tomato coriander paste and the chicken broth( water from the pressure cooker) and bring to a boil.
- Add the shredded chicken pieces. Add salt and pepper as per taste and boil for another 3 min. Switch off the flame. Your simple chicken coriander soup is ready.
- Garnish with coriander and serve hot.
