Chicken Pineapple Salad is an easy chicken recipe that combines vegetables, chicken and pineapple. The dressing is done using mayonnaise which gives it the creamy texture. This chicken pineapple salad is a little sweeter one and thus serves as a great accompaniment to any spicy starter. Often makes for a quick healthy dinner. Especially in the summer months when hot meals become a no-no, its mostly cold salads and some quick starters at my place. Chicken Cafreal and Russian Salad is one of my personal favorite combination ?

Preparation Time : 15 minutes
Cooking Time : 10 minutes
Ingredients:
Chicken(boneless) : 1 cup (bite size pieces)
Pineapple : ¾ cup ( bite size cubes/slices)
Green Capsicum : ½ cup
Yellow Capsicum : ½ cup
Cherry Tomatoes : 8 (cut into 2)
Onion : ½ cup (cut length wise)
Mayonnaise : 4 tbsp
Salt : as per taste
Oregano : 1 tsp (optional)
Method of Preparation:
- Boil Chicken pieces adding little salt and oregano, drain water and keep aside.
- Add mayonnaise to a large bowl and beat it, till it is light and smooth.
- Add all the remaining ingredients except pineapple. Mix gently so that all the veggies and chicken are coated with mayonnaise. Refrigerate.
- Keep the cut pineapple also in the fridge.
- When its time to serve, add the pineapple to the rest of the salad, mix gently and serve. You can sprinkle some more oregano if you wish. This salad tastes best when it is chilled.
