A treat for all chocolate lovers – chocolate lava cake ?
Whenever I would see pictures of a chocolate lava cake, I would always think that it would be a very complicated recipe. How can something which looks so delicious be easy to make? However, I was totally wrong. One of the simplest and tastiest recipes which I have come across, it made be realize that everything which looks complicated need not be. I followed a Sanjeev Kapoor recipe for this, however most of the chocolate lava cake recipes which I had read were similar.

Coming back to the chocolate lava cake, just imagine biting into a chocolate cake and having sweet warm molten chocolate flowing into your mouth….doesn’t it sound yummy? Yes, it is. Go ahead and try it to know what I mean and I am sure you will love it.
Makes: 11 cakes
Preparation Time: 20 minutes
Cooking Time: 8 minutes
Ingredients:
Plain Chocolate: 125 gm broken into pieces
Unsalted Butter: 9 tbsp + for greasing
Cocoa Powder: 1 tbsp
All purpose Flour: 1/2 cup + for dusting
Powdered Sugar: 6 tbsp
Baking Powder: 1/2 tsp
Eggs: 4
Vanilla Essence: 1/2 tsp
Method of Preparation:
- Preheat the oven to 180 degrees celsius. Grease the muffin tray and dust with flour. Remove the excess flour. I used ALDA Muffin Tray for 6 Muffins Bakeware
. - Put the chocolate and butter in a microwave safe bowl and microwave on high for 1 and 1/2 minute.Mix well.
- Break eggs in a bowl and beat well. Add sugar and beat well till light. Sift cocoa powder and add to egg-sugar mixture. Whisk well.
- Add chocolate mixture from step 2 to the egg mixture and beat well.
- Sift the flour and baking powder together. Add to the egg-chocolate mixture of step 4 along with vanilla essence.
- Pour the cake mixture into the muffin cups till around 3/4 full.
- Let bake for 7-8 minutes. Take the muffin tray out of the oven, loosen the edges carefully with a knife.
- Carefully unmould the cakes onto a serving plate and serve hot.

I have not tried the eggless version of choco lava cake. However, I know that usually apple sauce, banana, yogurt or vegetable oil is used as a substitute for egg in baking cakes. As and when I try the recipe without eggs, I will update it.
