Summers are a time when meals need to be light. Salads and soups serve as an excellent option. Here is a simple corn salad with a flavorful dressing 
Ingredients:
Potato : 1 (medium) boiled and chopped into small cubes
Carrot : 1 (boiled and Chopped into small cubes)
Corn Kernels : 1/2 cup (boiled)
White Vinegar : 1.5 tbsp
Olive Oil : 3 tbsp
Lemon Juice : 2 tbsp
Garlic flakes : 4 (finely chopped)
Pepper : 1/4 tsp (or as required)
Mint Leaves : 8-9
Salt : as per taste
Method of Preparation:
- Add olive oil, vinegar, lemon juice, garlic and pepper in a small bowl and mix.
- Add the potato, carrot and corn kernels in a bowl.
- Add 3-4 tbsp of the prepared dressing of step one to the veggies and mix.
Salad is ready.
If you have any dressing left you can serve it once you plate the salad as per taste. You can serve it chilled or at room temperature.
