Cowpea bean sabzi or Goan valanchi bhaji

This Cowpea bean sabzi recipe is a traditional Goan recipe. Yes, this no onion, no garlic cowpea bean sabzi is often made on pure veg days or religious hindu festivities. I find this way of making sabzis really nice for two main reasons -one its quite healthy as very less oil is used; secondly it doesn’t make use of many spices or so the basic taste of the vegetable can be relished. I know people who do not like veggies will not be able to relate with this ( sadly for me my hubby belongs in this category :(). Thankfully this is among the few sabzis he has a spoonfull atleast.

Ingredients:
Fresh Cowpea beans : 1 1/2 cup (chopped)
Green chilli : 1- 2 (slit vertically)
Mustard Seeds : 1/2 tsp
Asafoetida (hing) : 1/4 tsp
Scrapped Coconut : 2 tbsp
Sugar : 1/3 tsp (optional)
Oil : 1 tsp
Salt : as per taste

Method of Preparation:

  1. Heat oil in a skillet. Add mustard seeds and asafotida.
  2. Once the mustard seeds begin to splutter, add the chopped cow pea beans. Give a light stir. You can add around 1 tbsp water, cover it with a lid. Allow the cow pea beans to cook covered.
  3. Once the cow pea beans turn soft, add the scrapped coconut, sugar and salt. Mix well and let it cook uncovered for 3-4 min. Your healthy cowpea bean sabzi is ready.

  • Asafoetida (hing) : ¼ tsp
  • Scrapped Coconut : 2 tbsp
  • Sugar : ⅓ tsp (optional)
  • Oil : 1 tsp
  • Salt : as per taste
