Ingredients:
Sandwich Bread – 8 slices(edges trimmed)
Coriander leaves – 1 cup
Mint leaves – ¾ cup
Grated Coconut – ½ cup
Green Chilies – 2
Sugar -1 tsp
Lemon juice – 1 tbsp
Salt – to taste
Butter – 2 ½ tsp
Cucumber slices – 8
Tomato slices – 8
Method of Preparation:
1. In the small unit of mixer, add the coriander leaves, mint leaves, grated coconut, green chilies, sugar lemon juice and salt. Grind till you get a fine paste.
2. Take two slices of bread and apply butter on one side of each slice.
3. Apply the Coriander Mint chutney from step one on the buttered slide of each slice.
4. Place two slices of cucumber and two slices of tomato on one of the slices. Place the second bread slice on top. Cut the sandwich diagonally. Serve with tomato sauce.
