Prawns Pulao

A very delicious Prawns Pulao recipe which has a very different taste brought about by the ground spices and coriander added to it
Ingredients
  • Prawns: 1 cup shelled and deveined
  • Basmati rice: 2 cups
  • Carrot: 1 peeled and sliced into thin strips
  • Capsicum: 1 sliced into thin strips
  • Green peas: ½ cup
  • Ginger: 2 inch piece
  • Garlic: 20 cloves
  • Onion: 2-3 chopped
  • Cinnamon: 1 inch piece
  • Cloves: 5-6
  • Peppercorns: 10-12
  • Green chilies: 2-3
  • Coriander: 1 cup
  • Turmeric Powder: 1 tsp
  • Chili Powder: ½ tsp
  • Tamarind: 1 marble sized ball
  • Water: 5 cups
  • Eggs: 2
  • Salt: to taste
Instructions
  1. Apply salt, turmeric powder (1/2 tsp) and chili powder (1/2 tsp) to the prawns and keep aside.
  2. Heat 1 tsp oil in a pan and stir fry the onion till translucent. Remove it and keep aside.
  3. Add more oil to the same pan and stir fry the carrot, capsicum and green peas in the pan and keep aside with the onion.
  4. Stir fry the Prawns and add to the veggies which are kept aside.
  5. Break the eggs in the kadai and stir fry. Add to the veggies.
  6. Grind together the ginger, garlic, green chilies, cinnamon, cloves, peppercorns, coriander and tamarind.
  7. In a pan, mix together all the stir fried vegetables,eggs, prawns and the chili coriander paste from step 6. Add salt and turmeric powder(1/2 tsp) and let cook. Keep it aside.
  8. Heat a little ghee in the kadai and stir fry the rice. Add the veggies-prawns-egg mixture to the rice and mix well.
  9. Heat the water separately and add to rice. Close lid and let rice cook on medium heat till rice is completely cooked.
