Banana Bread

Serves: 1 loaf
- All-Purpose Flour: 2 cups
- Bicarbonate of Soda: 1 tsp
- Salt: ¼ tsp
- Eggs: 2
- Butter: ½ cup melted
- Brown Sugar: ¾ cup
- Vanilla Essence: 1 tsp
- Over ripe bananas: 2 and ⅓ cup
- Pre-heat the oven to 180 degrees celsius. Grease a loaf pan with oil\butter.
- Sift together the flour, bicarbonate of soda and salt.
- Mix together brown sugar and butter. Beat well.
- Beat eggs and add to butter-sugar mixture.
- Add mashed bananas and vanilla essence to sugar- butter mixture and beat well.
- Add the liquid mixture from step 5 to the flour and mix well.
- Pour the batter into the loaf pan. Let bake for 1 hour or till toothpick inserted comes out clean. Let cool for 10 minutes and cut into slices.
