A delicious and easy Prawns Biryani recipe. This recipe consists of three parts – making the rice, making the gravy and making the garnishing. Then the rice and gravy are layered out and garnished with fried onion and cashew nuts. A truly mouth-watering affair
Ingredients
Prawns: 1 and ½ cup shelled and deveined
Onions: 2 medium sliced
Tomatoes: 2 medium chopped
Ginger Paste: 1 tsp
Garlic Paste: 1 tsp
Curd: 2-3 tbsp
Chilli Powder: 2 tsp
Biryani Masala: 1 tsp
Turmeric Powder: ¼ tsp
Ghee: 1 tbsp
Salt: to taste
Basmati Rice: 1 and ½ cups
Cinnamon: 1 inch
Cardamom: 2
Cloves: 3
Onion: 2 sliced
Cashew nuts: ½ cup broken into pieces
Ghee: ¼ cup for garnishing
Instructions
Boil around 5-6 cups of water. Add cardamom, cloves ,cinnamon and salt.
Add rice to the boiling water and let cook till done. Drain and keep aside.
Heat ghee in a pan and sauté the onion till translucent. Add ginger garlic paste and sauté for a minute. Add tomatoes and sauté.
Add chilli powder, turmeric powder, salt and Biryani masala and mix well.
Add prawns and saute for 1-2 minutes.
Add curd and ¾ cup of water. Cover and let the gravy cook till it becomes dry and prawns are cooked.
In a deep bottomed pan, heat oil in a pan. Fry onion till golden brown. Drain on absorbent paper.
Fry cashew nuts till golden brown. Drain on absorbent paper.
Grease a baking tray. Arrange a layer of gravy on the tray.
Arrange a layer of rice on the prawn gravy. Pour in a little ghee.
Repeat with another layer of prawn gravy and rice and ghee.
Finally arrange rice as the final layer and garnish with fried cashew nuts and onions.
Seal the tray with aluminium foil.
Cook in a pre-heated oven at 170 degrees Celsius for 10 minutes. Serve hot.
Notes
If you do not want to use oven for final steps, you can also do it on gas top. Place a heavy bottomed flat pan on the gas flame. Place the utensil with layers of rice and gravy on the heavy bottomed pan with closed lid. Cook on low flame for 10 mins.
