Broccoli Corn Tikki

Broccoli Corn Tikki is a crunchy tasty snack which combines the health benefits of broccoli and corn.
Ingredients
  • Broccoli florets: 2 cups finely chopped
  • Sweet Corn: 2 cups boiled and lightly crushed
  • Onion: 1 large chopped
  • Cashew Nuts: ½ cup cut into small pieces (optional)
  • Ginger Paste: 1 tsp
  • Garlic Paste: 1 tsp
  • Chili Powder: 2 tsp
  • Salt: to taste
  • Bread Crumbs: 1 - 1 and ½ cups
Instructions
  1. Heat 2 tbsp oil in a pan. Add onion and stir fry till translucent.
  2. Add ginger and garlic paste and stir fry.
  3. If adding cashew nuts, add them now and stir fry till brown.
  4. Add broccoli and sweet corn and stir fry for 2-3 minutes.
  5. Add chili powder and salt and mix well. Switch off the flame.
  6. Add bread crumbs and mix well. Start with adding 1 cup bread crumbs and check if you can bind it together properly. If required, add more bread crumbs.
  7. Divide into 16 portions.
  8. Heat oil on a flat frying pan. Take each portion and flatten into a tikki.
  9. Shallow fry on pan till golden brown on both sides.
  10. Serve with ketchup.
