Egg Fried Rice is a very simple and easy to make rice preparation in the Chinese cuisine
Ingredients
  • Eggs: 2
  • Rice: 1 cup
  • Spring Onion with Greens: 1 finely chopped
  • Onion: 1 small finely chopped
  • Garlic: 1 tsp
  • Carrot: ½ medium finely chopped
  • Green Capsicum: 1 medium finely chopped
  • Soya sauce: 1 tsp
  • Pepper Powder: ¼ tsp
  • Vinegar: ½ tbsp
  • Salt: to taste
Instructions
  1. Whisk the eggs and keep aside.
  2. Cook rice in sufficient water. Drain and set aside to cool.
  3. Heat oil in a pan. Add garlic, onion and spring onions and saute for one minute. Reserve some spring onion greens for garnish.
  4. Add carrot, capsicum and continue to saute for another minute.
  5. Add cooked rice and cook on high heat for a minute tossing continuously to avoid burning.
  6. Add soy sauce, salt and pepper powder and mix gently. Transfer to separate bowl.
  7. In the same pan, heat 1 tsp oil, pour eggs and lightly scramble. Add fried rice to this and mix.
  8. Mix in vinegar and garnish with spring onion greens. Serve hot.
