Rosti is a Swiss dish consisting of coarsely grated potatoes shaped into patties and fried
Ingredients
  • Potatoes: 4 large
  • Onion: 1 medium
  • Salt: to taste
  • Pepper: to taste
  • Cheese: ½ cup (Optional)
  • Butter: 2-3 tbsp
  • Additional Butter and Olive Oil: for frying
Instructions
  1. Coarsely grate the potatoes using the julienne attachment on a mandolin. Add to it grated onion.
  2. Add salt and pepper to the potatoes and keep aside for 5 minutes.
  3. Squeeze out all the excess water from the potatoes. Add cheese and 3 tbsp butter to the potatoes and mix well.
  4. Heat a small pan. Add 1 tbsp of oil and 1 tbsp butter on it and let it heat.
  5. Drop handful of potatoes into the pan covering the bottom of the pan. Gently spread with a spatula and create a pattice of ¼ inch thickness.
  6. Cook on medium heat till golden brown on one side. Flip over and let cook till golden brown on other side too.
  7. Serve the rosti hot. It can be eaten plain or with a side dish of fried egg, grilled chicken etc.
