Bruschetta

- Crusty Baguette: 1 loaf
- Tomatoes: 8 chopped
- Onion: 1 chopped
- Dried Basil Leaves: 1 tbsp
- Extra Virgin Olive Oil: 60 ml
- Apple Cider Vinegar: 30 ml
- Garlic: 2-3 cloves finely chopped
- Salt: to taste
- Pepper: to taste
- Mix together the onion, tomatoes, garlic and basil leaves. Mix well.
- Add vinegar, oil, salt and pepper and mix well.
- Cover and refrigerate for atleast 1 hour. This will allow the flavors to blend together.
- Slice the baguette loaf diagonally, into thick slices and toast the slices until they are light brown on both sides.
- Serve the mixture on the slices of bread.
