Puran Poli is a traditional sweet flat-bread which is made in India in the States of Goa and Maharashtra. It is usually served on auspicious occasions as dessert and during festivals like Holi and Padwa.
Ingredients
  • Chana Dal (Split Bengal Gram): 1 cup
  • Jaggery: 1 cup
  • All purpose flour: 1 cup
  • Whole wheat flour: 1 cup
  • Turmeric Powder: ½ tsp
  • Cardamom Powder: ¼ tsp
  • Oil: 1 tbsp
  • Salt: to taste
  • Ghee: for frying
Instructions
  1. Cook the Chana dal in a pressure cooker for around 5 whistles so that it becomes very soft.
  2. Drain the excess water in the dal using muslin cloth.
  3. Place dal in a pan along with jaggery and let cook on low flame stirring occasionally till the mixture is dry.
  4. Add cardamom powder,1/4 tsp turmeric powder and a pinch of salt and mix well. Let cool.
  5. Grind the mixture to a smooth paste. Your Puran is ready.
  6. Mix together the all purpose flour, whole wheat flour, ¼ tsp turmeric powder, oil and salt to taste.
  7. Knead into a soft dough using around ¾ to 1 cup of water.
  8. Divide the puran and dough into 14 balls each.
  9. Apply oil to your palm and place one portion of dough on it. Spread out the dough with your fingers into a small circular disk of 2-3 inches.
  10. Place a portion of puran at the center of this disk.
  11. Bring the edges towards the center and seal them together.
  12. Using rolling pin, start rolling the puran-dough ball from step 11 sprinkling some flour over it as required.
  13. Place the rolled puran poli on a flat frying pan, let cook on one side. Flip it over and apply ghee. Let cook till golden brown on other side too and apply ghee.
  14. Repeat with all other portions.
Notes
You can cover the rolling board with a plastic sheet for easy rolling.
