Serves: 3 medium sized pizzas
 
Here is a veg pizza recipe made from the scratch i.e including the pizza base, pizza sauce and topppings.
Ingredients
  • All purpose flour: 3 and ½ cups
  • Active dry yeast: ¾ tbsp
  • Olive Oil: 5 tbsp
  • Sugar: 1 tsp
  • Warm Water: 1 and ¼ cup
  • Salt: to taste
  • Tomatoes: 4 pureed
  • Garlic: 5-6 cloves finely chopped
  • Dried basil: 1 tbsp
  • Dried Oregano: 2 tbsp
  • Onion: 1 medium sliced into rings
  • Capsicum: 1 medium cut into rings
  • Mushroom: 250 gm chopped
  • Olives: 2 tbsp chopped(Optional)
  • Mozzarella Cheese: As required
Instructions
  1. Add sugar and yeast to the warm water and let it sit for 15-30 minutes till it becomes frothy.
  2. Add to the bowl 3 tbsp olive oil, 3 cups of flour and salt.
  3. Knead the dough into a smooth ball. Use additional ½ cup of flour while kneading if required.
  4. Apply oil all over the dough. Cover with moist cloth and keep in warm place for around 1 hour.
  5. The dough will double up. (You may need to keep it for more time based on the temperature outside)
  6. To make pizza sauce, Heat 1 tbsp olive oil in a pan. Add garlic and sauté for 2-3 minutes.
  7. Add tomato puree and sauté for 3-4 minutes.
  8. Add 1 tbsp oregano, basil and salt. Mix well and cook for another 2-3 minutes.
  9. To make toppings, Heat 1 tbsp olive oil in a pan. Add onion and capsicum and sauté for 2-3 minutes.
  10. Add mushrooms and olives and sauté for another 2-3 minutes.
  11. Add 1 tbsp oregano and salt. Mix well
  12. Finally, Grease and dust a baking pan.
  13. Divide the dough, pizza sauce and toppings, each into 3 parts.
  14. Place one part on the pan and flatten into disk.
  15. Brush some olive oil on the pizza base.
  16. Apply one portion of pizza sauce on the pizza base.
  17. Add one portion of toppings.
  18. Top with grated mozzarella cheese as per taste.
  19. Bake the pizza in a preheated oven for 20 minutes at 200 degrees Celsius.
Notes
Common mistakes to avoid:
Make sure that you do not use hot water with yeast and sugar as hot water would kill the yeast. Use warm water. Basically if you insert your finger in the water, it should feel hot but not burning hot.I placed the water in the microwave for 15-20 seconds.
