Chicken Kofta Curry

- For the kofta:
- Ginger: 1 inch piece
- Garlic: 16 cloves
- Green Chilies: 4
- Oil: ½ cup
- Onion: 1 large thinly sliced
- Chicken: 500 gm minced
- Coriander Powder: 1 and ½ tbsp
- Chili Powder: 1 and ½ tsp
- Garam Masala: ½ tsp
- Salt: 2 tsp
- Curd: 3 tbsp beaten
- Coriander Leaves: 2 tbsp finely chopped
- Egg: 1 beaten
- For the gravy:
- Onion: 2 large
- Ginger paste: 1 tsp
- Garlic paste: 1 tsp
- Bay Leaves: 3
- Cardamom: 4
- Cinnamon: 2 – 1 inch sticks
- Tomatoes: 2 medium pureed
- Coriander Powder: 1 tbsp
- Cumin Powder: 1 tbsp
- Chili Powder: 1 and ½ tsp
- Turmeric Powder: 1 tsp
- Salt: 2 tsp
- Water: 1 and ½ cup
- Garam Masala: ¼ tsp
- For the Kofta, Grind ginger, garlic and green chilies into a paste
- Heat the oil in a pan. Add onion and fry till golden brown. Drain onions and keep aside. Keep aside the pan with oil for later use.
- Mix the ginger paste, onions, chicken, coriander powder, chili powder, garam masala, salt, curd, coriander leaves and egg.
- Make 20 balls and keep aside.
- For the Gravy, Grind onions into a paste. Heat the oil in the pan. Add bay leaves, cardamom and cinnamon. Stir fry for a few seconds.
- Add onion paste and fry till golden brown.
- Add ginger garlic paste and stir fry briefly.
- Add tomatoes, coriander powder, cumin powder, chili powder, turmeric powder and salt and mix well.
- Stir fry till oil starts to separate. Add the water and garam masala and mix well.
- Add the kofta balls in a single layer in the gravy.
- Reduce heat to medium and close lid till the kofta balls are completely cooked.Baste with the gravy from time to time
