Palak Rice

Palak rice is a very healthy and easy rice preparation which combines rice with the goodness of spinach.
Ingredients
  • Basmati Rice: 1 cup
  • Cardamom: 2
  • Cloves: 2
  • Cinnamon: ½ inch piece
  • Cumin seeds: ½ tsp
  • Bay Leaf: 1
  • Ginger: ½ inch piece
  • Garlic: 2 cloves
  • Onion: 1 small
  • Spinach: 15 leaves
  • Green Chilies: 2 small
  • Green Peas: ½ cup
  • Salt: 1 tsp
  • Water: 2 and ¼ cups
Instructions
  1. Wash and soak rice in water for ½ hour.
  2. Grind the ginger, garlic, onion, spinach and green chilies into a paste.
  3. In a pan , heat oil. Add cumin seeds, cloves, cinnamon, cardamom and Bay Leaf and stir fry briefly.
  4. Add the ground palak paste and stir fry for 2-3 minutes.
  5. Add salt and green peas and mix well.
  6. Add rice and water. Close lid and let cook till rice is completely cooked.
