Custard Cookies (Eggless)

Custard cookies are very simple melt in the mouth cookies made with custard powder giving it a nice flavor.
Ingredients
  • All Purpose Flour: 1 cup
  • Softened Unsalted Butter: 1 cup
  • Custard Powder (Plain Vanilla): ½ cup
  • Powdered Sugar: ½ cup
  • Vanilla Essence: ½ tsp
Instructions
  1. Cream together the vanilla essence and butter till butter is very soft.
  2. Mix together the custard powder, all purpose flour and sugar.
  3. Add dry ingredients to the butter and mix well.
  4. Knead to form dough adding very little extra flour if needed. Divide the dough into 20 circular portions and flatten slightly.
  5. Place the cookies on a greased baking tray. Using the back side of the fork make lines on the cookies.
  6. Preheat oven to 180 deg Celsius and bake for 15-18 min.
  7. Remove the cookies from the oven, they will be soft, especially the centers – and that is fine as they will harden later. Cool on a wire rack.
