These Whole Wheat cookies use wheat flour instead of all purpose flour and jaggery instead of sugar, thus making them quite healthy.
Ingredients
Whole wheat flour: 1 cup
Baking Powder: 2 tsp
Cold Butter: 5 tbsp (approx 100 gm)
Salt: A pinch
Jaggery: ½ cup
Milk: 1-2 tbsp
Instructions
Mix together the whole wheat flour, baking powder and salt and mix well.
Chop the butter into very small pieces and add it to the wheat flour.
Mix well with your hand so that butter blends with flour and resembles crumbs. Add jaggery and mix well.
Add as much milk as is required to make a soft dough. Knead well to make a smooth dough.
Dust the rolling board and rolling pin with flour. Take a portion of this dough and roll it out on the rolling board to ¼ inch thickness.
Cut it out using the cookie cutter to desired shapes.
Gather the remaining dough and repeat procedure. I divided the cookies into two batches. Place the cookies on a greased tray and bake in a pre-heated oven at 180 degrees Celsius for around 10-12 minutes. You will know that the cookies are done once the base starts browning.
Remove from the tray and let cool. Remember that once the cookies cool down, they harden a little more.
Store in airtight container
