Patoli or Patoleo (plural) are sweet steamed wheat flour rolls stuffed with coconut and jaggery mixture. These turmeric leaf cakes are prepared in Goa on Nag Panchami and on the day of Tay/Hartalika, on the eve of Ganesh Chaturthi. It is made of wheat flour, grated coconut and jaggery, and cooked by wrapping and steaming in turmeric leaves which impart a lovely flavor to the pataleo.
Ingredients
  • Whole Wheat Flour : 3 cups
  • Water: 2.5 cups
  • Grated Coconut: 3 cups
  • Jaggery: 1.5 cups
  • Sesame seeds: 1.5 tsp
  • Salt: to taste
  • Cardamom Powder: 1 tsp
Instructions
  1. Wash the turmeric leaves. Wipe and keep aside.
  2. Mix whole wheat flour, water and salt to taste to make a thick paste.
  3. For the stuffing, mix together the jaggery, grated coconut, salt and sesame seeds in a pan. Let cook. Add cardamom powder and mix well.
  4. Take some wheat flour paste and apply on a turmeric leaf.
  5. Put 2-3 tbsp of the coconut jaggery mixture on one side of the turmeric leaf.
  6. Close with other side of the leaf and seal.
  7. Place a few of the stuffed turmeric leaves on a steamer and steam for 15-20 minutes. When they are ready, the color of the leaves will change and the wheat flour paste would be cooked.
  8. Allow to cool. Unwrap and enjoy the yummy patoli.
