Ragda Pattice is a very popular snack and fast food in India. It consists of patties made of mashed potatoes and ragda which consists of a thick gravy made of white peas.
Ingredients
  • Dried White Peas: 1 and ½ cup
  • Garlic: 3 cloves finely chopped
  • Onion: 2 big finely chopped
  • Tomato: 1 medium finely chopped
  • Chilli Powder: 3 and ½ tsp
  • Chat Masala: 2 and ½ tsp (optional)
  • Turmeric Powder: ½ tsp
  • Potatoes: 6 boiled and mashed
  • Corn flour: 2 tbsp
  • Bread Slices: 3
  • Coriander: ¼ cup finely chopped
  • Sev: As required
  • Tamarind chutney: As required
  • Mint Chutney: As required
Instructions
  1. To make Ragda, Soak the dried white peas in sufficient water overnight. Pressure cook for 3-4 whistles. (Till very soft)
  2. Heat a little oil in a pan and sauté the garlic and half the onion till translucent.
  3. Add tomato and sauté for 2-3 minutes. Add 1 and ½ tsp chili powder, ½ tsp chat masala, turmeric powder and salt. Mix well.
  4. Add the cooked white peas and mix well.
  5. Take around ¼ of the white peas mixture and blend to smooth paste.
  6. Add this blended white peas paste to the white peas mixture and mix well.
  7. Add water as required to make a gravy. Close lid and bring to boil. Keep aside.
  8. To make Pattice, dip the bread slices in water for a few seconds. Squeeze out excess water and keep aside. Mix together the potatoes, bread slices, cornflour, 2 tsp chili powder, 2 tsp chat masala and salt to taste.
  9. Divide into 15-20 portions.
  10. Take each portion in your hand and flatten it out to around 3 inches diameter.
  11. Shallow fry the pattice till golden brown on both sides.
  12. Take two pattice in a shallow plate.
  13. Put 1 ladleful of ragda on top of it. The amount of ragda you add would depend on how you like it.
  14. Similarly put as much tamarind and mint chutney as suits your taste.
  15. Put onion, coriander and sev over it. Your delicious Ragda Pattice is ready to eat.
