Palak Sandwich

Palak Sandwich is a very healthy sandwich recipe which uses a filling of spinach (palak) and potatoes. It is very easy to make and uses simple ingredients.
Ingredients
  • Spinach (Palak): 200 gm
  • Mint Leaves: a handful
  • Garlic: 4 cloves
  • Potatoes : 2 medium boiled and peeled
  • Green Chilies: 2 small
  • Tamarind : 1 tsp
  • Salt: to taste
  • Bread Slices: Around 16 slices
  • Butter: As required
Instructions
  1. Heat sufficient water in a big pan and once the water starts boiling, put off the flame and add the palak to it. Keep it in this hot water for some time and then remove them from the water.
  2. Roughly cut the boiled potatoes.
  3. Grind together the palak, green chilies, garlic, tamarind and salt. Once it forms into a paste, add the chopped potato pieces to it and pulse it briefly such that the potato gets mashed but doesn’t completely get paste like.
  4. Apply butter on one side of each bread slice.
  5. Take one of the bread slices, and put 2 tbsp of palak mixture on the side which does not have butter.
  6. Cover with non buttered side of other bread slice.
  7. Make sandwiches in a sandwich toaster. Serve with tomato ketchup.
