Kale Broccoli Salad

Kale Broccoli Salad is a healthy and tasty salad which is made using fresh veggies and simple lemon honey dressing. It makes a perfect light salad dinner!
Ingredients
  • Kale: 5 cups chopped
  • Broccoli: florets of 2 small heads
  • Carrot: 1 big grated
  • Onion: 1 small finely chopped
  • Feta Cheese: 150 gm cut into cubes
  • Dried Cranberries: ½ cup
  • Almonds: ½ cup
  • Sunflower Seeds: ¼ cup shell removed
  • Olive Oil: 2 tsp
  • Salt: ½ tsp
  • Dressing
  • Virgin Olive Oil: ¼ cup
  • Lemon Juice: 2 tbsp
  • White Vinegar: 2 tbsp
  • Honey: 4 tbsp
  • Mustard Powder: 1 tbsp
  • Dried Oregano: ½ tsp
  • Pepper Powder: ½ tsp
  • Salt: ¼ tsp
Instructions
  1. Steam the broccoli for 1-2 minutes till partially cooked.
  2. Put 2 tsp virgin olive oil and ½ tsp salt on the kale and massage the leaves well with your hand until the leaves color changes to a darker shade and it gets tenderized.
  3. Dry roast the almonds and slice them.
  4. Mix together the kale, broccoli, onion, carrots, dried cranberries, sunflower seeds, almonds and mix well. Add the chopped feta cheese and mix together.
  5. Mix together all the ingredients mentioned for the dressing.
  6. Pour the dressing over the salad and mix well.
Notes
Note: You can add more honey or lemon based on your liking.
