Quinoa Salad – a delicious and healthy salad which combines the goodness of quinoa with chickpeas, red bell pepper and cucumber.
Ingredients
  • Quinoa: ½ cup uncooked, rinsed
  • Water: 1 cup
  • Cucumber: 1 small chopped
  • Red bell pepper: 1 small chopped
  • Onion: 1 small chopped
  • Olive Oil: 1 tbsp
  • Lemon Juice: 3 tbsp
  • White Vinegar: ½ tbsp
  • Honey: 3 tbsp
  • Feta Cheese: 100 gm cut into small cubes
  • Salt: ¼ tsp
  • Black pepper powder: ½ tsp
  • Chickpeas: ¾ cup cooked
Instructions
  1. Combine the quinoa with water in a pan. Bring the mixture to a boil, then decrease heat and cook uncovered until the quinoa has absorbed all the water. Remove from heat, cover and let the quinoa rest for 5 minutes.
  2. In a bowl, combine together the olive oil, lemon juice, vinegar, salt, pepper and honey. Whisk until it blends well.
  3. In a large bowl, mix together the chickpeas, onion, red bell pepper, cucumber.
  4. Once the quinoa cools, add it to the bowl (step 3). Also add the feta cheese.
  5. Add the dressing from step 2 and toss until it is thoroughly combined.
Notes
You can add in more lemon juice or honey based on your liking.
