Grilled Chicken Caesar Salad is an easy salad recipe which is healthy and tasty too! It combines the goodness of avocado, cherry tomatoes and lettuce with chicken and eggs and makes a whole meal in itself.
Ingredients
  • Ingredients:
  • Chicken Breast Fillets: 2 large skinless (500 gm) Cut into small pieces
  • Olive Oil: 1 tsp
  • Lemon Juice: 2 tbsp
  • Garlic Paste: 1 tsp
  • Dried Oregano: 2 tsp
  • Pepper Powder: 1 tsp
  • Salt: to taste
  • Eggs: 4 hard boiled
  • Romaine Lettuce leaves: 6 washed, dried and shredded into big pieces
  • Cherry Tomatoes: 1 cup halved
  • Avocado: 2 sliced vertically
  • Parmesan Cheese: ½ cup grated
  • Croutons: ½ cup
  • Dressing:
  • Mayonnaise: ¼ cup
  • Greek Yogurt: ¼ cup
  • Olive Oil: 1 tbsp
  • Lemon Juice: 1 tbsp
  • Parmesan Cheese: 2 tbsp grated
  • Salt: to taste
  • Pepper: ½ tsp
Instructions
  1. Marinate the chicken with the olive oil, lemon juice, garlic, oregano, salt and pepper and keep it aside for half an hour.
  2. Heat a non stick grill pan with a small amount of olive oil and grill the chicken until golden on both sides and completely cooked. Remove the chicken and keep aside.
  3. Deshell and cut the eggs into quarters vertically.
  4. For the dressing, mix together the mayonnaise, yogurt, oil, lemon juice, parmesan, salt and pepper. Whisk until well combined.
  5. For assembling the salad, in a large bowl, place the lettuce with the avocado and tomatoes. Top with the chicken and eggs. Sprinkle the parmesan cheese over the chicken, eggs and vegetables. Pour over the dressing; top with the croutons, mix well to combine and serve!
