Green Peas and Mint Pulao

Green Peas and Mint Pulao is an easy to make rice dish which can be cooked very quickly. It goes amazing with any kind of curry or raita or can be also eaten by itself.
Ingredients
  • Basmati Rice: 1.5 cups
  • Green Peas: 1.5 cups cooked
  • Ginger Garlic Paste: 2 tsp
  • Green Chilies: 2 slit vertically
  • Onion: 1 medium chopped
  • Mint leaves: a handful chopped
  • Ghee: 2 tbsp
  • Cashew nuts: 15 cut into small pieces
  • Cumin Seeds: 1 tsp
  • Green Cardamom: 4
  • Cloves: 4
  • Bay Leaf: 1
  • Cinnamon: 1 inch piece
  • Star Anise: 1
Instructions
  1. Wash the rice well and then soak in sufficient water for half an hour.
  2. In a pan, heat the ghee. Add cashews and stir fry till brown. Keep aside.
  3. In the same pan, add the cumin seeds, cloves, cardamom, bay leaf, star anise and cinnamon. Saute for a minute.
  4. Add onion and ginger garlic paste. Saute till onion is translucent.
  5. Add the mint leaves and saute for a minute.
  6. Add the peas and saute for a minute.
  7. Add the rice and saute for a minute. Add cashew nuts and salt and mix well.
  8. Add 3.5 cups of water and cook on medium flame till completely cooked.
