Prawns Risotto

Prawns Risotto is a creamy and flavorful risotto recipe which is delicious and comforting. It is easy to make and gets ready quite quickly.
Ingredients
  • Olive Oil: 3 tbsp
  • Arboria Rice: 2 cups
  • Shrimp Broth: 8-9 cups hot
  • Garlic cloves: 6 crushed
  • Prawns: 1 kg shelled and deveined
  • Onions: 2 chopped
  • Smoked paprika: 1 tsp
  • Italian Seasoning: 1 tsp
  • Pepper: ½ tsp
  • Parmesan Cheese: 1 cup grated
  • Salt: to taste
  • Fresh Herbs(Chives, Basil): A handful
Instructions
  1. Apply smoked paprika, Italian seasoning, pepper and salt to prawns.
  2. In a pan, heat 2 tbsp oil. Add all the prawns to the pan and stir fry till cooked. Keep them aside along with any liquid residue on the pan.
  3. Heat 1 tbsp oil in a pan. Add the garlic and onion and stir fry till translucent.
  4. Add the unwashed rice to the pan and stir fry and cook for a minute.
  5. Add 4 cups of broth to the rice and cook on medium flame mixing from time to time.
  6. As and when you feel the liquid has reduced and it needs more broth, you can add 1 cup at a time.
  7. Once all the liquid has been used, the rice should be cooked and creamy.
  8. Add the prawns to it and mix well. Cook for a minute.
  9. Put off the flame and stir in the parmesan cheese and fresh herbs. Mix well.
