Chicken Avocado salad with yogurt dressing

Chicken Avocado salad with yogurt dressing is a delicious salad recipe which combines together the goodness of chicken, avocados, dill and yogurt.
Ingredients
  • For Salad
  • Chicken: 250 gm breast piece cut into small pieces
  • Avocado : 1 ripe cut into small pieces
  • Sweet corn: 1 cup cooked
  • Cherry tomatoes: 10 chopped into quarters
  • Chives: ⅛ cup chopped
  • Dill: 1 tbsp chopped
  • Eggs: 2 boiled and cut into small pieces
  • For dressing
  • Greek yogurt: ½ cup
  • Garlic: 1 clove minced
  • Lemon Juice: 1 tablespoons
  • Olive oil: ½ tablespoons
  • Salt: ½ tsp
  • Pepper: ¼ tsp
  • Dill: ¼ cup chopped
  • Pomegranate Seeds (optional): 2 tbsp + extra for garnishing
  • For Chicken
  • Salt: ¾ tsp
  • Pepper: ½ tsp
  • Paprika: ½ tsp
  • Lemon juice: 1 tablespoon
  • Olive Oil: 2 tablespoon
Instructions
  1. Wash the chicken and cut into small pieces.
  2. Apply the salt, pepper, paprika and lemon juice to the chicken.
  3. In a pan, heat 1 tsp olive oil. Once the oil is warm, add the chicken in the pan and let cook.
  4. Once cooked on one side, turn around and cook on the other side too.
  5. Keep aside. Shred into smaller pieces once cooled.
  6. In a bowl, mix together the tomatoes, avocado, chives, dill, pomegranate seeds and chicken and toss well together.
  7. For the dressing, beat together all the dressing ingredients.
  8. Pour the dressing on the salad and mix well.
  9. Make a base with a lettuce leaf.
  10. Pour the salad with dressing over the lettuce. Garnish with pomegranate seeds and chopped dill.
Notes
Adjust the amount of dressing you pour over the salad as per your taste. Some like a dry salad with less dressing, while others like their salad to be covered in a lot of dressing.
