Breakfast Casserole is a perfect breakfast recipe when you want to have something different but haven't planned in advance. Combining the goodness of eggs and milk this breakfast casserole is an healthy and easy recipe. :)
Ingredients
  • Tomato : 1 (roughly chopped)
  • Onion : 1 (roughly chopped)
  • Brown Bread Slices : 4 (cut into cubes)
  • Cheddar Cheese : 1 cup
  • Garlic cloves : 4 (finely chopped)
  • Eggs – 4
  • Milk : ½ cup
  • Oregano : 1 tbsp
  • Olive oil : 1 tsp
  • Pepper : as per taste
  • Salt : as per taste
Instructions
  1. In a pan, heat olive oil. Add the onion and garlic and stir fry till translucent.
  2. Add tomato and stir fry till soft.
  3. Add the salt, pepper and oregano and mix well. Transfer to oven dish.
  4. In a separate bowl, mix eggs, milk, salt and little pepper (as per taste) and whisk well.
  5. Add the bread pieces to the onion tomato mixture and mix gently.
  6. Add the whisked egg mix to onion tomato mixture and mix to gently coat the bread pieces. Be careful not to smash the bread completely.
  7. Add the cheese and give a light stir and bake in a preheated oven (180 deg Celsius) for 20-25. min until the top is a bit golden and crusty. Your Yummy Breakfast Casserole is ready!
Notes
You can use white bread if you do not like brown bread
