Couscous Salad

Couscous Salad is a healthy and yummy salad recipe in which couscous is tossed with vegetables, feta cheese, chickpeas and a lemony dressing!
Ingredients
  • Couscous: 1 cup
  • Water: 1 cup
  • Virgin Olive Oil: 2 tbsp
  • Salt: 1 tsp
  • Cucumber: ½ cup
  • Onion: ½ cup
  • Coloured Bell Pepper: ½ cup
  • Cooked Chickpeas: 1 cup
  • Basil: A handful chopped
  • Mint: 2 tbsp chopped
  • Feta Cheese: 100 gm cut into small cubes
  • Sunflower seeds: ¼ cup (optional)
  • For Dressing:
  • Lemon Juice: 3 tbsp
  • Honey: 1 tbsp
  • Virgin Olive Oil: 3 tbsp
  • White Vinegar: 1 tbsp
  • Oregano: ¼ tsp
  • Salt: ¼ tsp
  • Pepper: ¼ tsp
Instructions
  1. In a pan, add the water, salt and virgin olive oil and bring to a boil. Add the couscous, mix well and close lid till the water is completely absorbed by the couscous. Fluff it up with a fork and let cool completely.
  2. Mix together the couscous, onion, cucumber, bell pepper, chickpeas, feta cheese, basil and mint leaves. Mix gently so as to not mash the feta cheese.
  3. Mix together all the ingredients for the dressing in a bowl.
  4. Pour the dressing over the couscous salad and mix well. Stir in the sunflower seeds.
Notes
You can add more lemon juice or honey to your liking
