Egg Mayo Sandwich

Serves: 4 sandwiches
- Eggs: 4
- Bread Slices: 8
- Mayonnaise: 3 tbsp
- Pepper Powder: ¼ tsp
- Salt: to taste
- Butter: As required
- Oil: 1-2 tsp
- Heat oil in a pan and lightly scramble the eggs. I prefer not cooking them fully but taking it aside while it’s still slightly moist.
- To the scrambled eggs, add mayonnaise, salt and pepper. Mix well. Divide into four portions.
- Apply butter on one side of each bread slice.
- Take one of the bread slices, and put a portion of the scrambled egg on the side which does not have butter.
- Cover with non buttered side of other bread slice.
- Make sandwiches in a sandwich toaster.
