Eggs serve as an excellent option to make quick recipes. Since this recipe only involves tomatoes, which are to be made into a paste after frying, the preparation time and effort is really less. But trust me, the tangy spicy tomato based recipe will definitely be an instant hit. Also since its fairly dry, it serves as a good lunch box option along with bread or chapati.

Cooking Time: 15 minutes
Ingredients:
Eggs : 4 (boiled and halved)
Tomato : 4 large (roughly chopped)
Oil : 4 tsp
Chilli Powder : 1/2 tsp
Turmeric Powder : 1/4 tsp
Garam Masala Powder : 1/2 tsp
Salt : as per taste
Method of Preparation:
- Heat oil in a skillet. Add tomatoes and fry till they turn soft.
- Remove from skillet, cool and grind to a fine paste.
- Add the paste back to the skillet, add chilli powder, turmeric powder, garam masala powder and salt and mix well. Cook for a few minutes till oil separates.
- Add the eggs and stir gently to coat the eggs with the thick tomato base.
- Simmer for a few minutes. Garnish with coriander and serve hot.
Tastes best with chapati or as a side dish with rice.
