This is a very simple and quick recipe and goes very well with any gravy or yoghurt. I generally serve it with cucumber raita.
Last week I found myself with excess of mint in my fridge. I had already made mint lemonade and also used it for mint coriander chutney with ragda pattice the previous day. I started wondering what different recipe I could make with it. I did not want to make any more chutneys. I finally decided to try some rice dish with it. It turned out very good and the best part was that it was so simple to make.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
Basmati Rice: 1 cup
Green Peas: 1 and 1/2 cup
Mint Leaves: 1/4 cup finely chopped
Coriander: 1/2 cup finely chopped
Onion: 1 finely chopped
Garlic: 3-4 cloves finely chopped
Green chillies: 2 finely chopped
Pepper: A pinch
Salt: to taste
Oil: 1-2 tsp
Method of Preparation:
- Soak the rice in sufficient water for 1/2 hour.
- Heat oil in a pan. Add onion and garlic and sauté till translucent.
- Add the green peas, mint leaves, green chillies and coriander and stir fry for a minute.
- Add salt and pepper and mix well.
- Drain the water from the rice. Add the rice to the green peas and mix well.
- Add 2.5 cups of water. Close lid and let cook till rice is completely done.
