One Pot Pasta (Chicken Bolognese)

One Pot Pasta as the name suggests is a recipe where the pasta is cooked along with the sauce. In most pasta preparations the pasta and sauce are cooked separately and then combined. However in this one pot pasta recipe, the spaghetti is cooked in the simmering chicken bolognese sauce. Sounds yumm… doesnt it?

Both hubby and me absolutely love Italian food. So pasta (Pasta in tomato basil sauce, Chicken Spaghetti) , pizza (Veg pizza, Whole wheat flour Paneer tikka), Calzones figure on my menu pretty often :) We have heard about and had pasta in bolognese sauce at a couple of places. We had loved it everytime so I decided it was time to have it in the comfort of our home :)
Bolognese is generally a sauce with tomatoes and meat. I have used chicken here, and it can be replaced with any meat of your choice. Since the pasta is cooked in the sauce itself it eliminates the typical steps of cooking pasta separately, draining the water etc. Thus this one pot pasta recipe serves as a quick dinner option. :)

Ingredients:

Pasta : 125 gms
Tomatoes : 1 (finely chopped)
Tomatoes: 2 (pureed)
Carrot : 1 (diced)
Onion : 1 (chopped)
Oil : 2 tsp
Chicken : 1/2 cup (small cubes)
Italian Seasoning : 2 tsp
Pepper : 1/2 tsp (can be altered as per taste)
Salt : as per taste
Mozzarella Cheese (for garnishing) : as per choice
Basil leaves (for garnishing) : 6-7 (cut into thin stripes)

Method of Preparation:

  1. Heat oil in a non-stick sauce pan. Add onion and carrots. Once they turn slightly soft, add the chopped tomatoes and cook for 2-3 minutes.
  2. Add the chicken pieces and stir-fry. Once the chicken pieces turn white, add the tomato puree, pepper, salt and italian seasoning.
  3. Add 1/2 cup of water or broth and let it simmer.
  4. Break the spaghetti into two and add to the simmering sauce. Cover the pan and let it cook for 10-12 min till the pasta is perfectly cooked.
  5. Remove from flame, garnish with cheese and basil leaves and serve hot.
