Orange Cake

I love fruit based cakes. The flavor orange brings about to cakes and cookies – sometime by only including orange rind also is truly yummm :) The recipe mentioned here includes orange juice and orange rind. Before serving you can coat it with orange Marmalade or serve with a scoop of chocolate icecream or serve plain – thats the way I love it – simple tea time cake :)

Preparation Time: 10 minutes
Cooking Time: 15 minutes

Ingredients:
All purpose Flour : 1 cup
Powdered Sugar : 1/2 cup
Baking Powder : 1/2 tsp
Baking Soda : 1/2 tsp
Milk : 1/3 cup
Fresh Cream : 1tsp
Vegetable Oil : 1/4 cup
Orange zest : 1 tsp
Orange juice : 3 tbsp
Vanilla essence : 1/2 tsp
Egg : 1
Orange Marmalade : 4 tbsp (optional) for the glaze.
Salt : a pinch

Method of Preparation:

  1. Sift flour, sugar, baking powder and baking soda and keep aside.
  2. Add oil, milk, cream, orange juice, orange zest, egg and vanilla essence in a bowl and whisk well.
  3. Slowly add the flour and mix gradually.
  4. Pour into a greased pan and bake in a preheated oven (180 degrees) for 14-15 min – basically till a skewer inserted comes out clean.
  5. Remove from oven and cool on a wire rack. Spread a layer or orange marmalade and enjoy.

The marmalade glaze mentioned in this cake is optional, and it can be had plain like a tea-time cake. :) I personally love it that way.
