A mouth-watering Paneer frankie recipe with a paneer-capsicum filling.
This weekend, I wanted to make something different which I had never made before. Frankie was something which was at the top of my mind for a very long time. I finally decided to make Paneer Frankie as I had fresh Paneer in the fridge. It was a good decision as the Paneer frankie was a big hit with all of us.
Here is the step by step paneer frankie recipe with pictures:
Makes: 8 frankies
Preparation Time: 45 minutes
Cooking Time: 20 minutes
Ingredients:
Paneer: 100 gm cut into cubes
All purpose flour (Maida): 2 cups
Salt: to taste
Vegetable Oil: 2 tsp
Milk: 2 tbsp
Water: 2/3 cup
Butter: 2 tbsp
Onion: 1 medium thinly sliced
Ginger paste: 1 tsp
Garlic Paste: 1 tsp
Tomato: 1 medium cut lengthwise
Chili Powder: 1 tsp
Cumin Powder: 1 tsp
Capsicum: 1 medium cut lengthwise
Potato: 1 medium boiled, peeled and cut lengthwise
Coriander: 2 tbsp
Lemon Juice: 2 tsp
Ghee: As required
Method of Preparation:
To make dough for paneer frankie:
- Sift together the flour and salt, three times.
- Add oil, milk and 1/4 cup water. Mix well and start kneading.
- Gradually add the remaining water, a little at a time.
- Knead till the dough is smooth and elastic. I had to use a little less than 2/3 cup of water.
- Keep covered with a damp cloth about 1/2 hour.
To make filling for paneer frankie:
- Heat butter in a pan. Add onion and fry till golden.
- Add ginger and garlic paste. Add tomato and stir fry for 1 minute.
- Add paneer, chili powder, cumin powder and salt. Mix well. Add 1 tbsp water and cook for 2-3 minutes.
- Add capsicum, potato and 1 tbsp water. Cover and cook for 5 minutes.
- Cook till water has evaporated. Allow to cool.
- Add coriander and lemon juice. Mix well.
To make roti for paneer frankie:
- With oiled hands, knead dough for 1-2 minutes.
- Make 8 balls and keep covered with damp cloth.
- On a floured board, roll the ball of dough into a square (15 cm*15 cm)
- Put 1 tsp ghee on a flat frying pan. Cook the roti on both sides till light golden spots appear on both sides.
To make paneer frankie:
- Put a roti on the board. Spread 1/3 cup of filling at the center of the roti.
- Gently fold one edge over the filling.
- Fold the other end over the first end.
- Tuck in the roti at both ends and seal the roti.
- Heat 1 tsp of ghee on pan.
- Place the sealed frankie on the pan and let cook briefly on both sides. Your Paneer Frankie is ready!
