Pav Bhaji is a very popular snack among people of all generations. And of course, a great way to feed veggies to fussy eaters. My hubby and toddler both love it, so I end up making it quite often. I also made the Pav at home, so have a look if you want to try it.
Serves: 3-4
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Ingredients:
Onions: 2 big finely chopped
Tomatoes: 2 big finely chopped
Capsicum: ½ finely chopped
Carrot: 2 small
Cauliflower: 1 small
Green peas: 1 cup
Garlic: 4-5 cloves finely chopped
Potatoes: 2 big
Coriander: 1/4 cup finely chopped
Turmeric Powder: 1 tsp
Chilli Powder: 2 tsp
Everest Pav Bhaji Masala: 2 tsp
Salt: to taste
Method of Preparation:
- Cut the potatoes, carrots and cauliflower into big pieces. Boil these veggies along with the green peas.
- Heat a little oil in a pan and sauté the onion and garlic till translucent.
- Add the tomatoes and sauté for 2-3 minutes.
- Add turmeric powder, chilli powder, pav bhaji masala and salt. Close lid and cook for 2-3 minutes.
- Grind half of the onion-tomato mixture to paste. Add it to the rest of the onion-tomato mixture and mix well.
- Mash the boiled veggies and add to onion-tomato mixture. Add coriander and capsicum and cook for some time with closed lid.
