Pineapple Cucumber Salad

Pineapple Cucumber Salad is a beautiful salad that combines pineapple and cucumber in a sweet and tangy curd based dressing. This pineapple cucumber salad can serve as a great appetizer or snack for the summer months. The juicy pineapple cubes and the crunchy cucumber ones are fun to bite on with absolutely no guilt. :) Often evening snack time I used to munch on some oily stuff. So these days I try to make some salad for snack. Some of my favorite ones are Tomato Salad Cups and Cucumber Apple Salad.

Ingredients:
Pineapple : 3/4 th cup (cut into bite-size cubes)
Cucumber : 1 cup (deseeded and cut into bite-size cubes)
Spinach : 4-5 leaves (cut into thin strands)
Thick Curds : 3-4 tbsp
Honey : 1 tsp
Pepper Powder : 1/2 tsp
Lemon juice : 1 tbsp
Salt : as per taste

Method of Preparation:

  1. In a small bowl, add the curds, honey, pepper powder, lemon juice and salt. Mix well to ensure no lumps remain.
  2. Take a large bowl and add pineapple and cucumber cubes. Add the curd mixture of step one and mix gently to coat all the pieces with the curd mix.
  3. Add the spinach and once again mix gently. Your pineapple cucumber salad is ready. :)

Note : This salad tastes best when cold. However it is wise to serve this salad soon after preparing. On storing the cucumber and pineapple pieces tend to leave water which may make the curd in the salad runny. So best way is to use cold ingredients :)
