Poha fingers is an easy to make quick snack recipe. Poha fingers are made using some simple ingredients which are reasily found in any kitchen. Secondly since these fingers are shallow fried, the health conscious can relish them too. ?
Poha is rich in iron and hence has always been a healthy breakfast option. But why only limit to breakfast? Hence I came up with this tasty poha fingers. This is the most recent addition to my healthy and easy snack ideas. ? Some existing ones being – Tomato Salad Cups, Baked Samosa, Sprouts Chaat. ?
Another major advantage of these fingers over traditional poha plate is, it proves a great finger food for my little one. Do Not ask the state of the house when i gave her a plate of traditionally made poha last time. These poha fingers are truly a savior in terms of time required in cleaning the mess once you have allowed your toddler to eat on their own ? I think these poha fingers will also be a great tiffin box option or as a humble starter in any get-together ?

Makes : 10 – 12 fingers
Preparation Time : 15 min
Cooking Time : 10 min
Ingredients:
Poha (Beaten Rice) : 1 cup
Potato : 2 medium (boiled and mashed)
Cumin Powder : 1/2 tsp
Green Chilli : 1 (finely chopped)
Chilli Powder : 1/2 tsp
Turmeric Powder : 1/4 tsp
Raw Mango Powder : 1/3 tsp
Coriander leaves : 2 tbsp (finely chopped)
Salt : as per taste
Semolina : 1/2 cup
Oil : 4 tbsp (for shallow frying the poha fingers)
Method of Preparation:
- Wash the beaten rice well. Drain the water leaving just a little behind to soak the poha. (The amount of water will depend on the type of beaten rice. The thicker variety will need little more than the thinner one.)
- Add the soaked poha and boiled potatoes in a large bowl and smash the two to form a lump free dough.
- Add the cumin powder, green chilli, turmeric powder, chilli powder, raw mango powder, coriander leaves and salt. Mix well.
- Divide the dough into 8 – 10 parts. Gently shape each part with your hands as a cylinder or finger.
- Dip each finger in semolina to uniformly coat it. Heat a pan, add some oil and shallow fry each finger. Remove from flame once the fingers turn lightly golden brown on all sides.
Serve hot with tomato sauce.
