My little one just loves puffed rice and her liking for it has actually turned like a boon for me. Wondering how? Well if I need to keep her busy for sometime so that I can quickly get some work done without her following me to the kitchen and just opening and closing the kitchen drawers over and over again – well, I just give her a little plate of puffed rice and she sits eating them, picking each grain one by one with her tiny little fingers. Its really so cute that I often end up just sitting and watching her. And then I have to remind myself that I have to get some work done!
Due to my little ones new fondness with puffed rice, I ended up with two huge bags of it in my kitchen. That is when I decided to make this yummy snack. I also think its quite healthy compared to the fried chips and other store bought snacks.
Here is the recipe –
Ingredients:
Puffed Rice : 4 cups
Beaten rice : 2 tbsp
Oil : 3 – 4 tbsp
Ground Nuts : 1 tbsp
Curry Leaves : 2 tbsp (roughly chopped)
Cumin seeds : 1/4 tsp
Mustard Seeds : 1/4 tsp
Chilli Powder : 1/2 tsp
Turmeric Powder : 1/2 tsp
Salt : as per taste (I used around 1 tsp)
Method of Preparation:
- Heat oil in a small skillet and deep fry the beaten rice. Once the beaten rice gets nice and crisp, remove from oil and keep aside.
- Transfer this oil to a larger skillet and groundnuts. Once the groundnuts are fried, add the cumin seeds, mustard seeds and curry leaves and fry for 2 minutes on low flame.
- Add the fried beaten rice, salt, chilli powder, turmeric powder and salt. Mix well and remove from flame.
- Add the puffed rice and mix well, till all the puffed rice gets some color of the turmeric powder. Store in air-tight container.
You can eat this snack as it is or add some freshly cut onions, tomatoes and coriander. I often add all of these and a little of Khajoor Imli Chutney. 
Note : You can increase the amount of chilli powder as per your taste. Since my baby loves puffed rice, I was sure she would love this too. So I kept the chilli powder a little less.
