Sabzi means vegetable/(s)in hindi. Typically any recipe of cooked vegetables is also referred as sabzi, eg Pumpkin Sabzi, Capsicum Sabzi, Potato Sabzi, Cauliflower Sabzi.
Ridge gourd is extremely rich in dietary fiber and is several vital elements like iron, zinc etc. However I know not many people seem to have much appreciation for this vegetable. However here is an interesting recipe that adds a slightly different flavor to this plain vegetable. This is my moms recipe and I absolutely love it.
Ingredients:
Ridge Gourd : 1.5 cups (coarsely chopped)
Onion : 1 medium (chopped)
Toor Dal : 2 tbsp (boiled)
Green Peas : 2 tbsp (boiled)
Chilli Powder : 1/2 tsp
Turmeric Powder : 1/4 tsp
Shredded Coconut : 2 tbsp
Sugar : 1/4 tsp
Salt : as per taste
Method of Preparation:
- Add chopped ridge gourd and onion with little water (around 2 tbsp) in a skillet and cook covered on a medium flame.
- Once the ridge gourd is boiled, reduce flame and add the boiled dal, green peas, chilli powder, turmeric powder and mix well.
- Add shredded coconut, sugar, salt and mix well. Let it cook uncovered till any water has evaporated.
Serve hot with chapati or as an accompaniment with rice and dal.
