Simple Carrot Tomato soup

A warm soup just does wonders on a cold evening. And if the soup is a healthy and easy to make one- well it soon becomes mommys favorite. My husband and little one also loved it :)

With a toothless toddler at home – soups need to be on my menu regularly. This simple recipe has really proved a boon for me :)

Ingredients:
Tomato : 2 (Medium) roughly chopped
Carrot : 2 (Medium) roughly chopped
Onion : 1 (small) roughly chopped
Oil : 2 tsp
Fresh cream : 1 tsp
Pepper : as per taste
Salt : as per taste
Coriander : for garnishing

Method of Preparation:

  1. Heat oil in a skillet and add the chopped onion.
  2. Once the onion turns slightly soft, add the tomato and carrots. Let it cook till the tomatoes turn soft.
  3. Remove from flame, cool slightly and add to a mixer unit and grind till you have a smooth paste. You can add around 1/2 cup water.
  4. Transfer back to the skillet, add salt and pepper and bring to boil.
  5. Add the fresh cream and mix well. Remove from flame after a minute and garnish with chopped coriander.

Serve hot.
