If I conduct a survey among my friends about their favorite food, there is a very high probability that chaat will rank in the top 5. In fact if I ask them what they want me to make when they are coming over – Pav Bhaji and Ragda Pattice are the most common demands. So chaat is on top of their minds always. ? On the other hand if I ask them to rate sprouts I am sure most of them will just ignore my question and react as if sprouts are a non-edible thing. We all know that sprouts are extremely healthy and its great if we introduce them in our diet. Here is a recipe that combines the best of two worlds – the health quotient of sprouts and the tasty tangy flavors of chaat. ?
The sprouts used in this recipe is Matki or Dew Bean or Moth Bean.

Preparation Time: 5 minutes

Ingredients:
Matki (Dew Bean): 1 cup (sprouted and boiled)
Onion: 1 Large (finely chopped)
Tomato : 1 Large (finely chopped)
Nylon Sev (fine sev) : 1/4 cup
Coriander Leaves : 3 tbsp (finely chopped)
Chilli Powder : 1/2 tsp
Chaat Masala : 1/4- 1/2 tsp
Tomato Sauce : 2 tbsp)
Small crisp puris : 4 (crushed)
Khajur Imli chutney : 2 tbsp
Salt : as per taste
Method of Preparation:
- Mix all the ingredients except the sev and mix gently. (You do not want to squash the boiled sprouts)
- Add half of the sev and mix again.
- Garnish with remaining sev and serve.
Note : For boiling the sprouts, please add very little water as we want them to be soft but not like a paste. You can also simply steam them.
Also you can alter the content of the ingredients mentioned above to suit your taste. If you want to treat it more as a health food, you can reduce the sev serving. On the other hand if you are among those people who cant stand the sight of sprouts but have been advised to eat it, then feel free to increase the tang and spice. ?
To make sprouts: Wash and soak the beans in a good amount of water for 6-8 hours (maybe overnight). Drain the water the next day and either place in a covered strainer or tie it up in a muslin cloth for another 6 hours. Basically we need to drain water completely.
