Strawberry Banana Pudding is a creamy pudding combining strawberry and banana flavors in a beautiful way. The strawberries give a sweet and sour taste of strawberries while the bananas contribute sweetness and a creamy texture. The shia seeds give the perfect crunchy effect. Last week has been a chocolate week. After a series of chocolate based desserts (Choco Lava cake, Cola Cake and Chocolate and Vanilla Creams), I felt it was time for some fruity one. Not that we needed a break from chocolate ;). Maybe just a little variety on our dessert menu. Some ripe bananas on the shelf caught my attention. Strawberries and Bananas make a good combo. Thus a Strawberry Banana Pudding seemed like a good option to satisfy the sweet tooth.
The strawberry concentrate can be replaced with fresh strawberries. I wanted to use the strawberry concentrate which has been occupying space in my kitchen for quite some time. Though the intention was to have it with milk, it has found more opportunity in different desserts and mocktails ? This strawberry banana pudding is one such beautiful dessert. This one has a smooth and creamy texture and the shia seeds give it the perfect crunchy twist. This pudding is sure to leave you craving for more!

Ingredients:
Strawberry Concentrate (2 -3 tbsp) or fresh strawberries (4-6)
Banana : 2 (medium size)
Chia seeds : 1.5 tbsp
Coconut Milk : 3/4 cup
Sugar : 1-2 tsp (u can skip this depending on sweetness of strawberries)
Method of Preparation:
- Add the strawberry concentrate, bananas, coconut milk and sugar in a blender and blend till it becomes a smooth puree.
- Transfer to a huge bowl. Add chia seeds, mix well and place in refrigerator for 20 minutes.
- Remove from refrigerator, mix once more and transfer to individual serving dishes and refrigerate again atleast for an hour.
- Garnish with banana slice or strawberry or as per your choice. Serve cold
