Tomato Salad Cups with Sweet Basil Vinaigrette is a beautiful looking, healthy recipe. Its difficult to decide which is the star of this dish – the beautiful tomato cups, the delicious corn-cheese stuffing or the fresh and flavorful sweet basil vinaigrette. The three put together definitely make a super-hit combo.
The sweet basil vinaigrette can be stored for a few days in the refrigerator. It has a very fresh flavor and serves great as a salad dressing.
After trying to switch to healthier versions of snacks (Baked Samosa, Whole Wheat pancakes, Baked french fries) I thought of trying some salads as snacks. These tomato salad cups proved a huge success. Also if you have the vinaigrette ready, you can get them ready very quickly (even before hubby or kids reach out to the ready-made snack container ;)). These tomato salad cups look so fresh and inviting, that they can serve as a party appetizer too ?
Ingredients:
Tomatoes : 3 (medium size) (cut into halves)
Sweet Corn : 3-4 tbsp
Grated Cheese : 3 tbsp
For the Vinaigrette
Basil leaves : 1 cup
Garlic cloves : 2-3
Vinegar : 1-2 tbsp
Olive oil : 1 tbsp
Honey : 1 tsp
Sugar : 1/2 tsp
Salt : as per taste
Method of Preparation:
- Add all the ingredients mentioned for the vinaigrette except olive oil in a small unit of the mixer. Grind to a fine paste.
- Transfer to a small bowl. Add olive oil and mix. You Sweet Basil Vinaigrette is ready.
- Take grated cheese and boiled corn kernels in a clean bowl. Add 2-3 tsp of the basil vinaigrette and mix gently.
- Take half tomato, scoop out the seeds and discard them. Now take around 3/4 tbsp of stuffing and place it inside the tomato cavity. Garnish with some more vinaigrette. Repeat with remaining tomato halves and serve.
