Whole Wheat Banana Loaf

Whole Wheat Banana Loaf is an easy loaf that packs the goodness of bananas and whole wheat flour. This loaf is soft inside and crusty outside – and the crunchy walnuts on top make every slice of this whole wheat banana loaf an absolute indulgence.

Over-ripe bananas on the shelf is a very common site in my kitchen. So time after time I have tried several recipes using them. Some common ones are Instant Banana Coffee Cake, Whole Wheat Banana Muffins, Banana Bread. This whole wheat banana loaf has turned out to be a favorite as the whole wheat in it allows me to happily slide a slice in my little ones tiffin box. Also another thing that I love about this recipe is that slight changes in the ingredients also has given pretty good results. What I mean is you cannot be left with exactly 1 cup of over-ripe bananas every time right? So there have been times when the banana quantity was a little less, so I added slightly less flour and despite of these changes the end result has been satisfying :). Not all cakes give you this kind of liberty I feel.

Below is a step by step recipe for making this whole wheat banana loaf with pictures.

Ingredients:
Whole Wheat Flour : 1.5 cups
Bananas : 1 cup (mashed)
Softened Butter : 1/4 cup
Oil : 1/4 cup
Brown Sugar :1/2 cup
Sugar : 1/4 cup
Eggs : 2
Vanilla Essence : 1/2 tsp (optional)
Baking Soda : 3/4 tsp
Walnuts : 2 tbsp (crushed )
Salt : a pinch

Method of Preparation:

  1. In a large bowl add the butter, sugars, oil and baking soda and mix well.
  2. Add the mashed bananas and eggs and beat well. You can add the vanilla essence in this step.
  3. Add a pinch of salt and gradually add the whole wheat flour and mix well to form a uniform batter. The batter should be quite thick( refer pic below). If you feel the batter is still thin you can add 1-2 tbsp of more flour.
  4. Transfer the batter to a 9*5 inch loaf tin. Add the walnuts on top. Bake the loaf for 55-60 min at 170 degrees. Insert a skewer in the center to check if the loaf is completely done. Once done, remove the cake from the oven and let cool on a wired rack. Gently loosen the sides and transfer to a dish. Your whole wheat banana loaf is ready to be relished.
